I thought he started Leblanc after retired being a government worker and when he started helping Isshiki take care of Futaba, though I could be wrong. It's been a while since I played the game and I'm too debilitated to check the wiki.

Here's how it went down. Sojiro was a government official that acted as a liason between the establishment and Wakaba Isshiki's research lab. It was implied that he often made coffee and curry for Wakaba because she often didn't take good care of herself due to having to raise a child as a single mom alongside her job as the lead researcher of cognitive psiscience. She then refined these recipes which gave rise to LeBlanc's signature Coffee and Curry combo.

After Wakaba's apparant suicide, which hasn't happened yet, and taking custody of Futaba, Sojiro left his job at the government and became the owner of LeBlanc in order to protect her from her mother's enemies.

You're in college right now. You need to actually get your law degree and your license before you can do battle in the court room!

Edit: And you are also... might be moonlighting as someone who enters the realm of the human unconscious to fight demons, shadows and taking some people's hearts. After all Naoto had to deal with a Phantom Thief before 5 came around:V

You know, we wouldn't necessarily need to steal their hearts in order to extract a confession from them. Palaces tend to hold blatant ties to the crimes their owner is committing. Heck, Kamoshida literally has books with the names of all the people he physically abuses and sexually assaults in his palace.

Yeah, putting them under the microscope in an interrogation room and calmly tearing them apart while we blatantly call their shit out after investigating them (cause sometimes, a good lawyer need to investigate things when the police cannot help out, and they don't have a PI who can help out) would be also, very satisfying.
