I was kind of hoping our twin could mirror us, flipped eye colors and black instead of white or something maybe, but... *Shrug* I think I'd kind of like to try rainbow eyes, but I'm not sure.

You might be able to swing different load outs on specific missions, but you are largely expected to be deploying together and that is easier if you have the same roles.
Spotters aren't really needed on warships as that is what their large suite of scanning and range finding equipment is for.
Maybe, depends on how it goes and if it feels right thematically and narratively.

I like the gradient a lot, but I feel blonde and white don't have enough contrast to each other? I'm not sure what to do for hair, several enticing options here.

But my brain is too dumb to imagine her hair clearly, it just looks like bright to different bright, and it doesn't help that I don't know what her hair style actually is (unless I just missed it).
Umm, I'm using Byakuren from Touhou as a hairstyle example for my mind because she has that gradient (though for her, it's sharp at the middle, while I imagine you have it as more constant) and the long hair helps me visualise it better.
