Those going for the Gryphon, do keep in mind the Gryphons we're getting are described to be using missiles significantly less potent than the Reaper launchers in the short clip @Thebigpieman linked.

It is also, most notably, the Gryphon from .7, which had unlimited uses of the missile autoforge and spent CR instead of building flux.

Hilariously OP as you might imagine.

Honestly, pretty tempted by the choice for an eagle and a traditional escort for synergy and thematic alignment as well.

Oh? That was a thing? I think I didn't get into Starsector until 0.8.1, so I missed that glorious OP. But yeah, doesn't sound like we're getting the 0.7 Gryphon. The description explicitly mentions very high flux build-up as a thing for the Gryphon, and the feedstock is probably also not infinite in quantity. Then again, I am a flithy lover of everything high-tech in Starsector, and my personal favourite among cruisers has always been the Aurora-class, so I don't have all that much first-hand knowledge of what things like the Gryphon and Dominator are really capable in player hands. Though I do know that the Falcon and Eagle are both pretty solid ships in the hands of AI officers, as well as in your own hands: powerful enough to matter in any situation, robust and simple enough that it's hard to outright fuck up with them. Unless you're going for a miracle win against a fleet twice/thrice your own tonnage and every little mistake counts.
