Yeah, part of the intent was to make all the options a little unhinged in their own way. This is evangelion, you're gonna be a little screwed up no matter what you do. It's just up to you to decide exactly what kind of screwed up you are.
One, as far as Eliza of the Wastes is aware, is her mother alive?
Two, are there any other AU differences between this and canon, besides the different location, cast, and the fact that it took three angel attacks for the Evas to get activated?
And three, will we get the chance to pull off Asuka Quest style AT-Field hax? Because I am an amateur particle physicist, and I have ideas.

Eliza's mother is alive and well. She was crippled in the bandit attack, but she's being taken care of by the rest of the family.
This is full AU zone. You can't take anything for granted about the setting really, I've got a lot of plans for the world, and it's constructed a lot differently to Eva canon in a lot of places. Of course, there's a lot that's still the same, but you'll have to pick up the differences as the story goes on, and Eliza learns more about the world. Just like canon at least, this is a world full of conspiracies and secrets.
AT Hax are on the cards, if you want to go down that route. During the training you'll have the options to start building your characters specialization in and out of the Eva, and when the other pilots arrive as well you'll have a few options to decide their path as well, through not quite to the same level as yourself.
Break out the Geiger counters, boys! Because we're going to be doing some High Energy Particle Physics. Nukes will be a fucking firecracker compared to what I have in mind.

Dude, just the idea of shaped warheads is enough to get my brain tingling. Three words: multidimensional shaped warheads. (Of course, it depends on whether AT-Fields extend beyond our three dimensions, and whether the AT-Fields of Angels do this.)
But anyway, back to the task at hand. Right now, Bubbly is tied with Stressed at three votes each, while Cold is just behind at two votes. Cold has the obvious problems, while Bubbly could leave us too naive, and Stressed might mean we don't handle pressure well.
On the other hand, Cold will mean we are always cool as a cucumber. Bubbly provides a much-needed positive outlook. And finally, Stressed implies that we're realistic while still being human.
I could be persuaded to switch to Bubbly, but I'll need a convincing argument.

Myself, I don't want a completely broken character. We're already a wildling wasteland child whose first kill was at 11, I don't want to come off completely deranged(Cold).
Stressed is just a no go like you said, glass nerves are not what's needed.
EDIT: Well, these votes are all over the place. No Surname seems locked in, but the personality vote is rather schizophrenic. Bubbly's in the lead with 4 votes, and Cold is right behind with 3.

"Honestly? I think this is all kind of fun!" You gesture excitedly with your hands. "I think all this stuff is real cool, you know? We're all out here, fighting for humanity, in a cool base with giant robots. My world felt so small for so long, but now there are so many people here, so many things to learn and to do. I think it's great!"
Briggs lets out a small smile. "Well, that's certainly an interesting way of looking at things. I'm glad to hear that you're keen to get to work. Let's just hope you keep up the attitude, alright?"
"Hey, I'll do my best." You reply. "Eliza of the Wastes is on the case, y'know?"
Briggs gives a reserved chuckle. "No arguments from me. I just hope the other pilots are as upbeat as you".
"Oh, yeah, who are the other pilots anyway? Are they going to be training with me?"
"Not quite. Lana's being trained at a different facility, and Grey… well, Grey's a special case."
"Special how?"
"You'll see eventually I suppose. I wouldn't worry about it through, he's perfectly safe. At least that's what they tell me"
Amanda returns with your hot chocolate, and a coffee for herself and Briggs. "Hope I didn't miss too much" she says.
"Oh no", you reply. "The Major was just telling me about the other pilots"
"Ah, yes. I'm sorry that we couldn't get you in to meet them quite yet. You'll have quite a lot of time to get to know them when they do arrive through, you'll all be living together with the Major here" Amanda says.
"We're all going to be living together?"
"Yeah, we've got a house. We'll take you there this afternoon, get you accustomed. Brass – well the brass higher than me - thought it would be good for team building if we all lived together." Briggs says, nursing his coffee.
"Sounds fun!"
Amanda grins. "I love the enthusiasm! Oh, I'm sure that you'll fit in great. Oh, and, this is for you". She hands you a small glass and metal rectangle that you recognize as a smartphone. You know enough to realize that these are expensive goods these days, high quality electronics manufacturing is almost entirely reserved for NERV and other government operations, and possessing a smartphone is rare status symbol. "We'll use it to stay in contact. Do try not to lose it, these things are quite expensive."
You nod thoughtfully and try and tap on the black screen. Nothing happens. "Maybe we'll have to teach you how to use it through", Amanda interjects.

After a few hours of paperwork, it's already quite dark, and you start to head home with the Major. Your house is in Kirribilli, one of the few suburbs remaining that seems almost unchanged from before impact. Fancy houses, many of them clearly pre-impact, remain in good condition in the clear area for housing affluent figures in Sydney. Transport there is via the rail network, a sprawling system maintained by NERV that touches every part of the city. It's quite close to HQ, being only a 15-minute trip overall. You assume that that is on purpose, keeping you close in case of an Angel attack.
Briggs is decent enough company. As soon as he gets off the train, he lights up a cigarette, and you two begin the short walk to your new home.
"So… What was it like? Before the impact I mean. If, uh, that's an okay thing to ask. I hope it's okay thing to ask. It is okay?" Okay, well, you admit it. Tact isn't your best talent, years of living your life isolated as it was has left you a little direct in your curiosity and questions.
"Hm. No, you can ask. I just don't remember too much of it, though. I was 8 when the impact happened. We were on holidays in Australia, actually. I was born in England."
"Well, what do you remember?" You ask, tactless as ever.
"Everything was so much… more back then. There was more people, more food, more things. More… ideas and places, and possibilities I guess. I think the impact took so much more away then a lot of young people these days really realize." He takes another pull of his cigarette. "It didn't just kill people and demolish buildings, it took away a lot of the kindness and compassion in the world. It's hard to care about your neighbour when every day is a struggle just to get enough food and shelter to survive the night."
"Wow, uh, you must… regret it a lot then, yeah?"
"I don't quite think so. But… seeing the destruction, the death. I guess it did give me something. A desire to never see anything like it ever happen again." He chuckles a bit. "I think that's why so many of us survivors joined up with NERV and the military. We all had the same thought, upon seeing the damage inflicted on the world. Never again."
…
Home is a nice place. A real traditional 4-bedroom Australian house. The luxary is fairly enormous to you. Of course, you slept on a bed at home, when you weren't camping out of course, but things like constant electricity (power was a rare luxury for you, through some of your fondest memories admittedly were when your parents put on the power generator so you could watch some old Simpsons cartoons on VHS tapes that you scavenged), clean running water, electric heaters, and even lightbulbs are all very impressive.
You take a seat at your desk and look over a lot of the paperwork that you've received. Seems to be all sorts of plans and schedules for you for the next month or so, people to meet and things to do. Looks like you'll be very busy. You suppose you should start thinking about how you're going to spend your time now.
Pick 2.
[x] Personal combat training
You're already fairly competent when it comes to defending yourself. Your body count already attests to that. But with expert training from NERVs professionals, you could pick up actual martial arts, unarmed and armed fighting styles, and get some real practice in with some guns other than your bolt action rifle. This won't entirely carry over to Eva fighting, as fighting in a Eva is a different skill to fighting in person, through it will give you an edge in picking up Eva combat skills, as it all builds on the same fundamentals. Also includes a fair bit of personal athletics and gym work as well, to keep in shape and fit.
[x] Academics
You're expected to attend high-school once term begins again, but this represents going above the basic required effort to get passing grades, and actually attempting to seriously dedicate yourself to learning history, geography and the 'traditional' sciences. You didn't have much of an education until now, so it might be a bit harder for you to catch up, but you like to consider yourself to be a smart kid, and how hard can high school be compared to the trials of the wild?
[x] Metaphysics
NERVs chief scientist, Doctor Kerrington, offers to give you a crash course in modern metaphysical sciences, including AT field theory, biorecursion, soul interfacing and about 10 other words you didn't really have the ability to remember. While knowing this stuff won't actually help in day to day operation of an Evangelion, nor will it actually make you inherently more powerful or skilful in deploying any kind of AT Field, it may open the path for some new and interesting applications, if you make it that far.
[x] Engineering
Your training course offers you the opportunity to learn the fundamentals engineering, in regard to both standard engineering and Evangelion operations. You'll get into the gritty details of how Eva's actually function and learn how to diagnose and fix basic problems in the field. While NERV has a team monitoring telemetry at all times, there's a certain advantage to knowing the basics of it all yourself, especially if things go badly wrong.
[x] Computers
You have never used a computer before in your life. And yet… perhaps something about them calls to you. NERV is more than willing to give you a course in computer operations, including all sorts of details about how the NERV network and mainframes work and some programming as well. Maybe you'll take well to it and find that you actually really enjoy computers. Only you can decide.
[x] Social
Years of isolation have left charisma as your dump-stat something fierce, so maybe you should put some time into learning social skills. This isn't so much a course as it is just putting in some time to talk to people. Making chats with the people of NERV, getting used to how these city-folk communicate with each other, learning some tact and finesse with your words, and doing some networking.
[x] Tactics
They've got experts in small unit tactics to take you through the basics, including the finest ways to lead a small team, basic tactical maneuverers, proper and clear communication in military settings, and all sorts of things like that. Will give you a better ability to execute some of the more insane tactics that you're bound to come up with in the field, and possibly give you some better suggestions or ideas of tactics to execute as well, when the time comes.
[x] Strategy
The art of leading a large amount of people. Major Briggs himself is offering to tutor you in what he knows about military command, running a large operation like the Evangelion program, how to get things done and make all the pieces fit together and what not. Includes things like administration, large scale strategic concepts, a bit of leadership skills, and a fair bit of knowledge on how NERV actually operates as a paramilitary organization.
[x] Write-In
Maybe you want to spend your time learning something not on the list. The sky is the limit when it comes to things you could possibly do. Learn medicine? Search out secret allies? Break into NERV HQ and rifle through their stuff? Teach yourself sign language? Pick up a crafting hobby or other skill? Who knows! Only you know!
