A few interesting small houses still open, such as Velaryon, Tarly, Royce, Dayne, or even Hardyng if you want to cause trouble in the Vale.

If anyone out there who are far more sneaky and subtle than I am wants to pick up Littlefinger, I'd be willing to hand him over and just RP the Arryns as his puppets/lackeys.
I want to do him justice, but I know that I'm not capable of doing so under the present circumstances. I'd love to just instead RP the Arryns and more or less follow his lead.
