Unless Moses deliberately kept humanity from learning how to operate his tech, or there was some key piece of it he monopolized the production of with robots, the complete nature of the collapse is implausible. Even without an AI operating things, humans could operate the controls manually.
They might not understand why pushing button A then B then C spits out a thumper or why B then C then A spits out a frameshift drive, and they might never understand how those things work -- but unless Moses deliberately obfuscated the manufacturing process, they would be able to modify the machinery to have those buttons to press. It's technology, not magic.
