I main ranged phys so my affinity for some choices is pretty strong here!

I do think hunting is a great grab in general, since it covers a pretty broad array of skills that are pretty widely applicable. A background with alchemy and sneaking and basic skill at tracking are pretty useful for a mercenary or adventurer in ways that our Myrmidon skills simply won't cover, but most all the options look neat, and can probably be folded into something quite useful and interesting in the long run.

I really like the idea of dancing. Some holdover of the actual culture of our people we can teach the the younger refugees to give them something tangible to hold onto.

Also, the image of a grizzled old catman letting go and dancing is fun.

The Ananta - among many other narrative elements - got done kinda dirty in Stormblood itself, so I can't not vote for it! As for the other, cooking in general seems a highly versatile social skill that can be the focus of a lot of narrative setpieces moving forward.
