I wanted dwarves as their skills are different from ours and being the legacies of both the ancient ones sounds like a fun thing.
The pale ones deserve our empathy and support.
Sensible elves. They can act as our historians, given how mono-focused our elders get.

We know dwarves were made to be servants by the giants and similar for kobolds by the dragons. Where did elves come from? All we know is they started a war that caused the surface world civilizations to fall.

Primary sources, right at hand, right there, still playing the games of the time and speaking the languages of the time, how can you choose any others?

To your knowledge, no one made elves. Their essence is a lot more natural than yours, though it has traces of the waste magic thrown around during the Original War. That's all the data you have on them coming to life. After the dragons' pyrrhic victory, the elves emerged as the best able to take advantage. They then proceeded to create gods and kill each other over who would get their attention, which is what the Grey Elves wanted nothing to do with.

I will try to give an argument for Dwarves and against Demonkin.
To begin with we are a orderly society in general, being made by the Dragons as Servants, with Demonkin being chaotic enough to be ungovernable. It would also mean Demons are taking an interst into us, which I take as a bad thing. Obisian Dwarves on the other hand are defectors and fought with us for the Dragons, who we both miss. They would also be a great help in the Underdark itself with their affinity and they mirror us in the want of knowledge.
