One of the mostly-overlooked aftereffects of Second Impact is that some people ended up with hair that shifts color. With some people (like Asuka), the shifting is somewhat subtle and occurs at random, with others (say, Ritsuko), the change is more drastic and less temporary.

and the piece of resistance... this issue of them of not being able to pick a hair color and stick with it has been ongoing since the bloody proposal!


The short answer is yes, Gainax has a history of not making up their minds about Asuka's hair color.
Red
Auburn (reddish brown)
Red (strawberry blonde)
Red (strawberry blonde)
Auburn (brownish red)
Auburn (reddish brown)
Auburn (varies from reddish brown to brownish red)

Seems pretty open and shut that Asuka is a redhead. (Auburn hair has always counted as redhead).

Probably with auburn hair that changes color in different light. Even auburn hair can look strawberry blonde in the right light. (I actually knew a girl in high school who had auburn hair that usually was reddish brown but could shift to brownish red easily, and even strawberry blonde in certain conditions of sunlight.)

Since the strawberry blonde pics are publicity pics, they probably are the specially lit ones, so I pronounce Asuka to be an auburn haired girl (probably leaning towards brownish red).

I have black hair that turns mouse brown in the right light. So yeah, can confirm, I guess.
 
From my experience as an artist, this is what I can deduce about Asuka's hair color. Yes, it indeed varies wildly from incarnation to incarnation, but as a rule it falls into three types depending on the version:

TV Asuka: Classic Redhead for the most part, with the occasional goof up of giving her brown hair or auburn. Her artwork in the character files proves this. Given the fact there were two animation teams and several studios helped Gainax animate the show (including Studio Ghibli, who handled Episode 6 "A Man Made Thing"), these variations can be chalked up as the different teams going off model.

Manga Asuka: Strawberry Blonde, because Sadamoto is extremely consistent with his depiction of Asuka in the manga.

Rebuild Asuka: I'll agree with Elder Haman and say Rebuild Asuka has Auburn hair, probably to reconcile Asuka's hair color variations in the original TV Show.

With all the talk of hair colors, I've decided that my headcanon for Asuka's hair is that it's very red when she's young (i.e the show), and gets progressively browner as she gets older, as certain hair colors (especially blonde) are prone to do.
 
There's no need to make it complicated. The much simpler explanation is that her hair changes depending on the lighting and the perspective of the observer.

I've known people who, depending on the weather, their haircut, and amount of lighting and light they had gotten recently, had a hair colour ranging from darker blond, over to chestnut brown, darker brown, to light black.

If a person has reddish hair? Depending on the lighting and how thick the hair is, hair colour can easily jump from reddish, orange, auburn, and the striking deep red.
