Even if Saitama!Taylor was a new concept, which it's not (I've personally seen at least two fics with that premise) there's no guarantee that would be the power she'd get. Punching Kaijuu is hardly a unique to him after all; Superman comes to mind for instance.

I was thinking One finger death punch with this or Crouching Tiger Taylor's powerset with infinitely scaling kung-fuu action, cheesy kung-fuu dialogue that even lets Lung speak when he's pumped up and the stranger ability of just tying your hair up and then having people not able to connect you to your civilian identity unless they are a thinker like Lisa, even if you do it in front of them.

God I miss that fic. I could link it if you want, it was some funny crack. And no this fic was before Crouching Tiger hidden Dragon. >.>

There's also the incredible Hulk, Asura from Asura's wrath and other rage based punch monsters. Since the Hebert temper and what not would make it fit.

Exaltations, variations of Eyes of Death Perception (with fists instead of knives). Hell, no need to go to crossovers or "one hit kill powers". Clockblocker's power (with a longer freeze period) would work perfectly well in this situation. Or possession / mind transfer / swap (so Taylor is in Leviathan's body, and Leviathan is in Taylor's). There are tons of variants.
