Well, we don't know what kind of creature our character is. Maybe it is a shapeshifting alien and part of their ability is to mimicry physiology, anatomy and psychology of other creatures to fit in. However, they need data to do so - so they steal it. But killing thier victim is not productive. So things get stolen, but target is not killed - just without some property. Gender just happen to be one of properties such a creature can steal. There are other possible scenarios, where it can make perfect sense.
