Honestly, my biggest problem with "head pat" is that it doesn't really feel like something Jotaro would do to me, even factoring in how he's diverged in this story. He's not exactly the affectionate, touchy-feely type; he's the stoic, punch-assholes'-teeth-out-the-backs-of-their-skulls type.
...Sold.I imagine that Jotaro would be doing this head pat in a stoic, visibly emotionless fashion. He thinks he's being reassuring (he'll probably even internally congratulate himself on emoting more than usual) but to most outside observers he's as stone-faced and intimidating as ever. Moka probably knows him enough to see it for what it is, that Jotaro-senpai is expressing gratitude and means what he says...even if she still considers Jotaro to be intimidating by default.
That's basically the idea. Imagine Mount Rushmore Face patting a cute girl's head, if Mount Rushmore had a face that looked like it wants to punch people.That's what makes it funnier.
